Anything marked with * = Required 4 chicken drumsticks or chicken pieces of your choice (drumsticks recommended) * 1 cup buttermilk or milk * 1 cup all-purpose flour * 1 tablespoon paprika 2 tablespoon cayenne pepper * 1 teaspoon onion powder * 1 teaspoon dried thyme 1 teaspoon dried oregano * 1/2 teaspoon salt * 1/2 teaspoon black pepper * 1/2 teaspoon garlic powder * 2 Eggs Vegetable oil, for frying * Before you apply the instructions lightly add 2 slashes on each side of the chicken drums/legs. In a bowl, marinate the chicken in the buttermilk (or milk) for at least 1 hour or overnight in the refrigerator. This will help tenderize the chicken and infuse it with flavor. In a separate bowl, mix together the all-purpose flour, paprika, cayenne pepper, garlic powder, onion powder, dried thyme, dried oregano, salt, eggs, and black pepper. This will be the coating mixture for the chicken. Remove the chicken from the buttermilk marinade, allowing any excess liquid to drip off. Let the chicken rest in the fridge for 45 minutes after coating it. Roll each piece of chicken in the seasoned flour mixture, pressing lightly to ensure it is well coated. Set the coated chicken on a plate. Preheat vegetable oil in a deep frying pan or skillet over medium-high heat. The oil should be approximately 350-375°F (175-190°C). Carefully place the coated chicken pieces into the hot oil, skin side down. Be cautious not to overcrowd the pan, as this can affect the frying process. Fry the chicken for about 5-6 minutes on each side, or until the coating turns golden brown and crispy, and the chicken is fully cooked. Ensure the internal temperature reaches 165°F (75°C). Once cooked, remove the chicken from the pan and transfer it to a paper towel-lined plate to drain any excess oil. Serve the spicy fried chicken hot as a main dish. Enjoy your meal!
